This dataset contains the physicochemical, structural, and functional characterization data of protein isolates extracted from black soldier fly (BSF) larvae using different purification techniques. The data includes results from alkaline extraction with acid precipitation (AAF) and treatments incorporating salting-in, salting-out, salting-in/out, and ultrafiltration. Additionally, it contains measurements from ultrasound-treated protein samples at various power levels and treatment durations. The dataset includes crude protein content, amino acid profiles, zeta potential, sulfhydryl group levels, FTIR spectra, SEM micrographs, SDS-PAGE protein banding patterns, x-ray diffraction patterns, and circular dichroism data. Functional property measurements such as solubility, surface hydrophobicity, water and oil binding capacity, foaming capacity, and foam stability are also provided. These data support the evaluation of how extraction and ultrasound processing modify the nutritional quality, structural features, and functional performance of BSF larval proteins for potential use as sustainable food ingredients.
